Oh my, don’t lose this recipe! This has always been a favorite of ours and we do extra on special occasions
Ingredients:
2 cups sifted powdered sugar
1 cup coarsely chopped pecans, toasted
1/2 cup butter, cubed
1/2 cup sugar
1/2 cup heavy whipping cream
1/2 cup packed brown sugar
1 teaspoon vanilla extract
1/8 teaspoon salt

Instructions:
1. Grease 8×8 pan with some butter. In a saucepan over low heat, melt 1/2 cup of butter.
2. Stir in 1/2 cup of granulated sugar and 1/2 cup of brown sugar. Cook until sugars are dissolved.
3. Add 1/2 cup of heavy whipping cream and 1/8 teaspoon of salt. Bring to a boil over medium heat, stirring constantly.
4. Cook without stirring and heat to 234°F (soft-ball stage) on a candy thermometer.
5. Remove from heat. Add vanilla without stirring.
6. Cool without stirring to 110°F, approximately 30 minutes.
7. Beat until slightly thickened.
8. Gradually mix in powdered sugar until smooth.
9. Add nuts and continue stirring until very thick and less shiny.
10. Spread immediately into the prepared pan.
11. Cool, then lift fudge out with foil. Cut into 1-inch squares. Store between waxed paper in an airtight container.
