Ingredients
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 large egg
1 tablespoon lemon zest
2 tablespoons lemon juice
1 teaspoon vanilla extract
1 1/2 cups rolled oats
1/2 cup chopped almonds
1/2 cup white chocolate chips
Directions
Preheat your oven to 350 degrees F and line baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a stand mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add in the egg, then stir in the lemon zest, lemon juice, and vanilla extract.
Gradually mix in the dry ingredients until just combined.
Gently fold in the rolled oats, chopped almonds, and white chocolate chips.
Drop rounded tablespoons of dough onto the prepared baking sheets.
Bake for 10-12 minutes until the edges are golden brown.
Let them rest on the baking sheet for a minute before transferring to a wire rack to cool.
