Preheat your oven to 350°F (175°C).
Place the wheel of brie on a baking sheet lined with parchment paper.
In a small bowl, mix together the low-carb honey substitute and red pepper flakes.
Drizzle the spicy honey mixture over the top of the brie.
Sprinkle the fresh thyme leaves over the brie and drizzle with olive oil.
Season with a pinch of salt and pepper.
Bake in the preheated oven for about 10-15 minutes, or until the brie is very soft in the center.
