Shrimp, Salmon, and Cream Cheese Verrine

Far from being a thing of the past, the appetizer or sweet verrine always makes an impact, from aperitif to dessert. We play with the juxtaposition of flavors (and colors) in this recipe for Smoked Salmon and Shrimp Verrines with Cream Cheese, to be enjoyed by the spoonful. Keep it in the refrigerator until ready to serve and customize it with seeds and herbs to give it even more zest.

Preparation time: 10 min
Ingredients:

– 16 pink shrimp, cooked and peeled
– 1 lime
– 1 garlic clove
– 150 g of fromage frais (such as Carré Frais)
– 1 tbsp. fresh chives
– 70g single cream
– 2 slices of smoked salmon
– 2 avocados
– 4 drops of Tabasco
– salt, pepper

Step 1
Divide the shrimp among the verrines. Peel the garlic and place it in the food processor bowl, then chop for 3 seconds at speed 5.

Step 2
Scrape down the sides of the bowl with the spatula. Chop again for 3 seconds at speed 5.

Step 3
Add the cream cheese, chives, single cream, salt, and pepper, then mix for 5 seconds at speed 3.

Step 4
Coat the shrimp with this mixture, then add the diced smoked salmon.

Step 5
Place the avocado flesh, lime juice, and Tabasco in the food processor bowl and blend for 5 seconds at speed 5.

Step 6
Cover the smoked salmon with this avocado cream. Refrigerate until ready to serve.

Tips:

You can decorate your verrines by arranging shrimp on top, sprinkling with chopped chives, or even lime zest.
