I’m telling you, this recipe is a keeper!
Ingredients
1 cup unsalted butter, softened
1/2 cup granulated sugar
1 tablespoon lemon zest
2 cups all-purpose flour
1/4 teaspoon salt
1 cup powdered sugar
2 tablespoons lemon juice
1 teaspoon lemon zest (for icing)

Directions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Mix in the lemon zest, then gradually add the flour and salt, mixing until just combined.
Turn the dough out onto a lightly floured surface and roll it to about 1/4 inch thickness.
Cut the dough into desired shapes using cookie cutters and place them on the prepared baking sheet.
Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool completely on a wire rack.
For the icing, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
Once the cookies are cool, drizzle or spread the lemon icing on top. Allow the icing to set before serving.
