1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon chopped fresh parsley (optional)
Directions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the diced ham, shredded cheddar cheese, almond flour, eggs, Parmesan cheese, garlic powder, black pepper, and salt.
Mix everything together until well combined. The mixture should be sticky and hold together.
Scoop tablespoon-sized portions of the mixture and roll them into balls. Place them on the prepared baking sheet.
Bake in the preheated oven for 15-18 minutes, or until the bites are golden brown and crispy.
Remove from the oven and let them cool slightly before serving. Sprinkle with chopped fresh parsley if desired.
Variations & Tips
Feel free to experiment with different cheeses like mozzarella or pepper jack for a different flavor profile. You can also add a pinch of cayenne pepper or some chopped jalapeños for a spicy kick. If you’re not a fan of ham, try using cooked bacon or turkey instead. These bites can be made ahead of time and stored in the fridge for up to 3 days, making them perfect for meal prep. Just reheat them in the oven before serving to retain their crispiness.
