OMG! I brought these to a gathering, and they vanished in no time.
Ingredients
8 slices of white or whole wheat bread
1/2 cup cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
2 large eggs
1/4 cup milk
1 teaspoon ground cinnamon
1 tablespoon granulated sugar
Butter or cooking spray for frying

Directions
Trim the crusts off the bread slices and use a rolling pin to flatten each slice.
In a small bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
Spread a thin layer of the cream cheese mixture on each slice of bread, then roll up tightly.
In a shallow bowl, whisk together the eggs, milk, and cinnamon.
Heat a non-stick skillet over medium heat and add a bit of butter or spray with cooking spray.
Dip each roll-up in the egg mixture, ensuring all sides are coated.
Place the roll-ups in the skillet seam-side down and cook until golden brown and crispy, about 2-3 minutes per side.
Remove from the skillet and sprinkle with granulated sugar before serving.
