Ingredients
1 cup all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cubed
1 teaspoon baking powder
1/2 cup milk
1 large egg
1 teaspoon vanilla extract
3-4 ripe peaches, peeled, pitted, and sliced
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
Directions
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
In a medium bowl, combine the flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Set aside 1/2 cup of this mixture for the crumb topping.
To the remaining flour mixture, add the baking powder, milk, egg, and vanilla extract. Stir until just combined.
Pour the batter into the prepared cake pan, spreading it evenly.
Arrange the peach slices on top of the batter in a circular pattern.
In a small bowl, mix the reserved crumb mixture with the brown sugar and cinnamon. Sprinkle this over the peaches.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
